Pat the pork loin dry with paper towels, then season all sides with salt, pepper, garlic powder, onion powder, and paprika.
Set your Instant Pot to sauté mode. Once hot, add olive oil and sear the pork loin on all sides until golden brown, about 2 minutes per side.
Turn off sauté mode. Pour in the chicken broth, soy sauce, honey, and minced garlic. Scrape up any browned bits from the bottom with a wooden spoon.
Lock the lid, set the valve to sealing, and cook on high pressure for 25 minutes.
Allow the pressure to release naturally for 10 minutes before switching to quick release.
Remove the pork loin and let it rest for 5 minutes before slicing.
If you want a thicker sauce, turn sauté mode back on, whisk cornstarch with a few tablespoons of the liquid, then stir it in and cook for 2-3 minutes until slightly thickened.
Slice the pork, drizzle with the sauce, and serve warm.
