In a large bowl, combine olive oil, minced garlic, ranch seasoning mix, parmesan, salt, and pepper.
Add chicken pieces and toss until evenly coated. Let marinate for at least 20 minutes.
Thread chicken onto soaked wooden skewers.
Preheat grill or grill pan to medium-high heat. Lightly oil the grates.
Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
Serve hot with extra parmesan sprinkled on top, if you like.
