Ingredients

  • 2 cups cooked chicken breast, shredded
  • 2 cups fresh spinach, chopped
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat olive oil and sauté onion and garlic until fragrant.
  3. Stir in spinach and cook until just wilted.
  4. In a large bowl, mix cooked chicken, rice, sautéed vegetables, cream of chicken soup, sour cream, salt, pepper, and paprika.
  5. Transfer mixture to a greased 9x13 baking dish.
  6. Sprinkle mozzarella and cheddar evenly on top.
  7. Bake uncovered for 25–30 minutes, until bubbly and golden on top.
  8. Let it cool slightly before serving.
