Ingredients

  • 1 loaf crusty French bread or baguette, sliced
  • 3 large ripe tomatoes, diced
  • 2 cloves garlic, minced (plus 1 whole clove for rubbing bread)
  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1/4 cup fresh basil leaves, chopped
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 400°F. Arrange bread slices on a baking sheet and toast for about 5 minutes until lightly golden.
  2. Rub the warm bread with the cut side of the whole garlic clove for flavor.
  3. In a medium bowl, combine diced tomatoes, minced garlic, olive oil, balsamic vinegar, basil, salt, and pepper. Stir gently.
  4. Spoon the tomato mixture over each slice of bread and serve right away.
